Nan's Christmas Cake Recipe 

1lb butter
1lb brown sugar
10 eggs
1.25lb plain flour
1/2tsp cinnamon
1/2tsp nutmeg
1tsp mixed spice
1lb currents
1lb sultanas
1lb seeded raisins
6oz glace cherries (proper ones)
6oz whole almonds
2oz figs

method:

(wash all fruit)

soak fruit at room temp in op frigate rum for 1 week
chop figs, halve almonds, grease cake tin, line with brown paper (or multiple paper layers).

cream sugar and butter
add eggs
add flour
add rest in order
rum from fruit makes it moist enough - no milk.

bake in slow (140C) oven for 2 hours.
after cooking, put 2 tbsp rum on top, fold paper over and leave to cool.
